Hon Mirin is a Cooking Sauce made from glutinous rice by the traditional methods, and is indispensable for Japanese cuisine.
It is characterized by the natural sweetness, UMAMI and rich flavor derived from Japanese special Koji (Aspergillus) and glutinous rice.
Hon Mirin contains glucose, maltose, kojibiose, trehalose and oligosaccharides, so it gives elegant and mellow sweetness different from sugar and puts shiny appearance to dishes.
It is widely used not only in Japanese cuisine, but also in the secret ingredients of sauces such as Chinese and French cuisine as well as removing the bad odor of fish cake and give UMAMI and good flavor to it.

Harima is the famous harvest area, green paddy fields spread in early summer and golden rice spikes glistened in autumn, where especially famous for " Yamada Nishiki " which is the best rice for sake brewing.
